Transfer chicken to a small casserole dish. Stir in carrots,peas, capsicum, corn and onion flakes.&lt;br /&gt;Pour sauce over all ingredients. Top casserole dish with sheet of pastry and trim around edges. Add cooked pasta, onion flakes, cajun spices, mustard, mayonaisse and pepper. Stir in tuna flakes. Pour into casserole and top with bread crumbs and cheese. Pour milk over top. It is actually a pikelet recipe from The "Central Cookery Book" (an old Tasmanian School recipe book). This recipe makes lovely pikelets to eat cold, but today I added more milk to make them more like pancakes and less like pikelets. It made 4 large pancakes. (My changes in brackets)&lt;br /&gt;&lt;br /&gt;4 ozs self-raising flour&lt;br /&gt;1/2 teaspoon salt (I used a pinch of salt)&lt;br /&gt;Nutmeg (I didn't add this)&lt;br /&gt;5 tablespoons milk  (I added more to make mixture less thick. Health Magazine Dec 2005)&lt;br /&gt;&lt;br /&gt;I worked this out to be approx 2.5 points per slice - 12 slices to the pie&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;4 tablespoons honey&lt;br /&gt;1 1/2 cups wheatmeal biscuits crumbs  (I used Milk Arrowroot and I also added 1 tablespoon melted butter to crust)&lt;br /&gt;1 400g can Skim sweetened condensed milk&lt;br /&gt;4 egg yolks  (I used 3)&lt;br /&gt;2 teaspoons lime zest&lt;br /&gt;1/2 cup fresh lime juice (I used the juice of 2 limes)&lt;br /&gt;2 egg whites&lt;br /&gt;1 tablespoon caster sugar&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Preheat oven to 175 degrees C and lightly grease a deep 20cm tart tin with a removable base (I used a pie plate lined with Glad Bake)&lt;br /&gt;&lt;br /&gt;Warm honey and stir into biscuit crumbs (I also added melted butter). Press onto base and sides of tin and chill.&lt;br /&gt;&lt;br /&gt;Meanwhile, mix condensed milk with egg yolks, lime juice and zest until well combined.&lt;br /&gt;&lt;br /&gt;In a separate bowl, whisk egg whites and sugar until soft peaks form. Carefully fold through lime mixture until just incorporated. Pour in the sour cream and enough milk to make a soft dough when mixed with a knife.&lt;br /&gt;Mix in all other ingredients. Roll out gently till about 2.5 cm thick. I use a glass to cut out the scones and dip it in flour after cutting each scone to stop mixture sticking. &lt;br /&gt;&lt;br /&gt;Arrange close together on a tray lined with baking paper, brush each scone with a little milk and bake in a preheated 200 degree C oven for approx 15 minutes or until cooked. Cool on a rack &lt;br /&gt;&lt;br /&gt;Serve warm, spread with light spread or light cream cheese spread. Add brown sugar, carrot, walnuts, melted Olive Grove , eggs, milk and vanilla.Mix all ingrdients until well combined. Pour mixture into prepared tin.&lt;br /&gt;&lt;br /&gt;Bake for 45 minutes or until a skewer inserted in the centre comes out clean. (Test with skewer in middle of cake before taking out. Form 2 patties and coat these in Seasoned Stuffing Mix or breadcrumbs. Spray a non-stick pan with olive oil spray and cook on each side for a minute or so - until golden brown.&lt;br /&gt;&lt;br /&gt;When cooked, squeeze a small amount of lemon juice on patties.&lt;br /&gt;Serve with a salad or on a slice of grain bread or in a roll with lettuce and thinly sliced tomato. Fit into lightly oiled large muffin tins (cut off excess pastry).&lt;br /&gt;&lt;br /&gt;Cook bacon between paper towel in microwave for a minute. Chop bacon into small pieces. Mix prepared zucchini, bacon, spice, salt, pepper and parmesan together. Add egg and milk mixture that has been whisked together and mix all ingredients well.&lt;br /&gt;&lt;br /&gt;Spoon mixture equally into pastry cases.&lt;br /&gt;&lt;br /&gt;Bake 20 minutes in oven (about 200 degrees). Beat in sugar till mixed and stiff. Beat in egg yolks and vanilla. &lt;strong&gt;Gently &lt;/strong&gt;fold in flour and salt until mixed.&lt;br /&gt;&lt;br /&gt;Pour into tin and bake in a pre-heated 200 degree (fan forced) oven for 15 to 20 minutes.&lt;br /&gt;&lt;br /&gt;Run knife around cake edge and turn out and cool on wire rack.&lt;br /&gt;&lt;br /&gt;When cool, split cake in two and spread centre with jam (if desired) and cream  (I use a spray can of cream Dairy Whip light cream). Dust top of cake with icing sugar or top cake with cream and strawberries and choc flakes (mini flake chopped into flakes)&lt;br /&gt;&lt;br /&gt;Cake is best eaten on day of cooking. Top with shredded (not chopped finely) mint and parsley. Mix all ingredients gently (with your hands of course).&lt;br /&gt;&lt;br /&gt;Pour over lime juice from onion and pour in a splash of olive oil(I left out the oil and it was still lovely). Roast until tender. Peel skin off capsicum (optional). Steam asparagus. Allow all to cool and arrange all on a plate with feta cheese squares, olives and pickles. Sprinkle some French dressing on top. Roll log in coconut to cover. Slice into 20 pieces. Keep refrigerated. I know it is a lot of washing up for one bottle of sauce, but it is worth it!&lt;br /&gt;&lt;br /&gt;4 large tomatoes (chopped)&lt;br /&gt;1 small onion (chopped)&lt;br /&gt;2 apples (chopped)&lt;br /&gt;4 cloves (remove when cooked)&lt;br /&gt;Sprinkle of garlic flakes&lt;br /&gt;Sprinkle of All Spice&lt;br /&gt;Sprinkle of nutmeg&lt;br /&gt;black pepper&lt;br /&gt;pinch of salt&lt;br /&gt;1/4 cup of vinegar&lt;br /&gt;1 dessertspoon of brown sugar&lt;br /&gt;2 sachets of tomato paste&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Mix all ingredients in saucepan and bring to the boil. Simmer for about 25 to 30 minutes, stirring occasionally.&lt;br /&gt;&lt;br /&gt;Allow to cool. Scoop out tomato skins and cloves.&lt;br /&gt;&lt;br /&gt;Blend in blender (when cool) just for a short burst (to keep sauce nice and thick, don't blend for long).&lt;br /&gt;&lt;br /&gt;Pour into a small jug and fill a 600ml bottle (sterilize the bottle first by washing, rinsing well and heating in the oven for 10 minutes).&lt;br /&gt;&lt;br /&gt;Keep sauce refrigerated. Simmer for 15 to 20 minutes, stirring occasionally.&lt;br /&gt;Wash a jar and rinse well. Heat jar in the oven for 10 minutes to sterilise.&lt;br /&gt;&lt;br /&gt;When mixture has cooked pour into jar. The Kraft CarbWell caeser dressing is just 1 point for 20mls and quite yummy. I have been grilling very lean bacon and making my own croutons. I use extra sharp grated parmesan and I don't have an egg on top and overall it isn't too high in points.&lt;br /&gt;&lt;br /&gt;I use leftover bread for my croutons. Cut off crusts. Spray with olive oil spray. Rub on garlic or sprinkle with garlic flakes and sprinkle on some herbs and spices. Cut up into small squares and bake slowly until light brown and crispy. Croutons are yummy and can be frozen for later use. Sprinkle a little parmesan on top of each muffin.&lt;br /&gt;&lt;br /&gt;Bake at 200 degrees for approx 15 minutes or until golden brown and cooked.&lt;br /&gt;&lt;br /&gt;These muffins are quite large so you could make 12 smaller ones if you have small tins. Pour a little sauce in ovenproof dish and place filled tubes on sauce. Add chopped dates.&lt;br /&gt;&lt;br /&gt;Whisk together 1 egg, sugar and then milk. Make sure sugar is dissolved. (keep a tiny amount for brushing scones)&lt;br /&gt;&lt;br /&gt;Make a well in dry ingredients and pour in liquid. Mix with a knife to form a soft dough.&lt;br /&gt;&lt;br /&gt;Roll out on floured surface (I use baking paper). Cut scones into 12 squares and place on baking tray lined with baking paper.&lt;br /&gt;&lt;br /&gt;Brush tops of scones with a little of the beaten egg, milk mixture.&lt;br /&gt;&lt;br /&gt;Bake in hot oven for 12 to 15 minutes. Drain water from these vegies. Mix Pasta sauce and tomatoes with vegies.&lt;br /&gt;Place a layer of lasagne sheets in lasagne dish. Simmer gently until mince and vegies are cooked.&lt;br /&gt;&lt;br /&gt;Place mixture in casserole and top with mashed potato and sprinkle on parmesan cheese.&lt;br /&gt;Bake in oven till very hot and cheese is melted and brown. Take off heat and mix in mustard, curry, mayo, onion flakes and flour. Put back on heat and gradually heat and add milk, stirring all the time to avoid lumps. Add scallops and stir till boiling. Turn down and simmer for about 3 or 4 minutes. Chop bacon. Mix up 3 eggs with a fork and add bacon, chives and grated parmesan and pepper and salt to taste.&lt;br /&gt;&lt;br /&gt;Cut pastry into quarters and fit in lightly oiled large muffin tins. Trim edges and roll trimmed pieces to make top of pie. Spoon in egg and bacon mixture and top with pastry. Cut slit in top of pie to allow steam to escape. Rub in spread with fingertips till it resembles breadcrumbs. Lightly stir in sugar, egg, milk and mashed banana.&lt;br /&gt;&lt;br /&gt;Spoon into prepared tin and bake 25 minutes till it is golden brown and springs back when lightly touched. Today I am making a Beef Hot Pot (4 points per serve - serves 4)&lt;br /&gt;&lt;br /&gt;500 grams beef (cubed) - heart smart&lt;br /&gt;2 diced parsnips&lt;br /&gt;2 diced carrots&lt;br /&gt;piece of pumpkin diced&lt;br /&gt;small piece of capsicum - diced&lt;br /&gt;1 sachet (50g) Fountain tomato paste&lt;br /&gt;dash of tomato sauce&lt;br /&gt;dash of Worcestershire sauce&lt;br /&gt;1 small onion - diced (or dash of onion flakes)&lt;br /&gt;2 pkts continental roast meat gravy mix&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Preheat slow cooker. Make up gravy mix with boiling water. Place vegies and beef in slow cooker and pour over gravy mix. Cook on low for 7 to 9 hours or high for 5 hours. (or in moderate oven in casserole for 3 or so hours )&lt;br /&gt;&lt;br /&gt;Serve with rice or potato (points not included above) or make these delicious dumplings and pop on top of the beef mixture 40 minutes before ready to serve. I used to have one at the Bakery with a coffee when I went with hubby, but now I make my own lower fat versions. (Makes 4 pies) Just as nice, but I have to eat them at home.&lt;br /&gt;&lt;br /&gt;Boil approx 1/2 a cauliflower in pieces till cooked (do not over-cook). Spray muffin tins with olive oil spray. Thaw out a sheet of low fat puff pastry. Each sheet makes 4 pies. May have to be rolled a bit thinner. Cut circles slightly larger than muffin tins and place in tins. Mix up a packet of Continental Four Cheeses Sauce Mix (where would I be without my Continental sauces?) as per directions on packet. If you like curry, add a little curry to the cheese sauce. (I also add black pepper) Pour cheese sauce over drained cauliflower. Place cauliflower mix in each of the pie bases. Fill them till they have a rounded top. Top with 1/2 tablespoon grated parmesan. Bake in 200 degree oven till pastry is cooked. I have a sadly neglected herb garden (I'm not a gardener and don't like it). I grow my herbs in pots outside though and it is great to pick fresh herbs. I picked tyme, oregano,rosemary and parsley and finely chopped it and mixed in some garlic. As I was adding it to the butter I decided to make my own special little parcel of low fat delight. I cut off 4 slices of French Stick (2 points) and slightly melted 1 portion of Laughing Cow light cheese (1/2 point) and mixed in my herbs and garlic. (approx 4 1/2 points per serve - serves 4)&lt;br /&gt;&lt;br /&gt;500g lean diced lamb (heart smart)&lt;br /&gt;dash of curry powder (or curry paste)&lt;br /&gt;1 sachet tomato paste&lt;br /&gt;dash of worstershire sauce&lt;br /&gt;1 pkt roast meat gravy mix (mixed with a cup of boiling water)&lt;br /&gt;1 tablespoon sultanas&lt;br /&gt;1 large sweet potato diced in large pieces&lt;br /&gt;2 carrots sliced&lt;br /&gt;2 sticks celery chopped&lt;br /&gt;1 small onion chopped&lt;br /&gt;sprinkle of mixed spice&lt;br /&gt;pepper to taste&lt;br /&gt;&lt;br /&gt;Mix all ingredients in slow cooker and cook on high for 5 hours or low for 7 to 8 hours. (cook in moderate oven in casserole for about 2 1/2 to 3 hours)&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Serve with plain CousCous (made to directions on packet) approx 2 1/2 points per 50g (small serve) or pasta or rice. Place on baking paper and lightly spray with olive oil spray. Thaw pastry sheet while sausages are cooking. Make sure all skin is removed and cool sausages in water. Cut pastry sheet in half lengthways. Cut round ends off sausages. Place 2 sausages on half a sheet and roll. Seal edge with a little milk. Cut each rolled up sausage into 4 sausage rolls. Brush with a little milk. Sprinkle seasoning mix over fish and squeeze lemon juice on top. Sprinkle with black pepper. Wrap fish in baking paper to make a parcel. &lt;br /&gt;Bake in moderate oven for approx 20 minutes. Open parcel carefully at the top to brown top during last 5 minutes if desired.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Delish served with a leafy salad and sweet potato mashed. Add carrot, zucchini, tomatoes, tomato paste and pasta sauce and simmer till cooked. Place a layer of lasagne sheets in lasagne dish. Next pour on a layer of  mixture, then pour on half the cheese sauce mix&lt;br /&gt;Place on another layer of lasagne sheets, pour on more mixture , another layer of lasagne sheets, the remaining tomato mixture and remaining cheese sauce mix.&lt;br /&gt;Sprinkle on parmesan cheese.&lt;br /&gt;Cover with foil and bake for approx. 40 to 45mins in a 180 degrees (moderate oven).&lt;br /&gt;I have cut down on meat and added the vegies. No one will even notice the vegies once it is cooked. Not a very sweet one, but I don't like things too sweet. This is nice to have on hand if I feel like a snack with a cuppa. Doesn't look very elegant but tastes nice.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;3 cups Muesli (I used Lowan Fruit and Nut Natural Muesli)&lt;br /&gt;1/3 cup honey&lt;br /&gt;1 cup orange juice (no added sugar)&lt;br /&gt;1 egg white (optional – binds together better, but I leave it out)&lt;br /&gt;&lt;br /&gt;Place honey and orange juice in a small saucepan and bring to the boil. Reduce and simmer for 8 to 10 minutes or until mixture is syrupy.&lt;br /&gt;Stir syrup into Muesli and mix well.&lt;br /&gt;Press mixture into slice tray lined with baking paper&lt;br /&gt;Bake in moderate oven for 20 minutes or until golden brown. In a microwave safe bowl place roughly chopped Mars Bars, margarine and golden syrup. Melt on high for 2 minutes, stir well, return to microwave for a further 30 seconds. Add milk and stir mixture until smooth. Pour melted chocolate mixture into rice bubbles, stirring until covered with chocolate mix. Coat a slab tin with cooking spray and press mixture into tin evenly. Refrigerate.&lt;br /&gt;&lt;br /&gt;ICING: once slice is set place all icing ingredients into a small mixing bowl and mix together well. Spread icing over base and refrigerate. Fill with cheese mixture. Roll chicken breast in breadcrumbs and place on baking paper on a tray  (sprinkle with grated parmesan if desired, points not included) and bake in moderate oven for 40 to 45 minutes. No need to turn. Mix soup mix and barbecue sauce with a cup of water. Pour over chicken and vegies and stir. Cook in Slow Cooker 5 hours on high or 7-8 hours on low.
