Lemon Loaf Cake

Lemon Loaf Cake

½ cup Olive Grove Lite Margarine (or low fat margarine)
1 cup sugar
2 eggs
1 and ½ cups self raising flour
Pinch salt
½ cup of low fat milk
Dash of vanilla essence
Grated rind of 1 lemon
Juice of 1 lemon

Cream margarine and sugar. Lightly beat eggs and mix in. Add milk, salt , vanilla and lemon rind. Add flour till mixed.

Pour mixture into paper lined loaf tin. Bake in moderate oven (350 degrees) for 40 minutes.

Combine ¼ cup of sugar and the juice of 1 lemon and pour over cake while it is still hot. This makes a very moist, lemony cake. If you want it less lemony, add a teaspoon or so of lemon juice to the mixture before baking and don’t pour sugar and lemon juice on cake, just ice with vanilla or lemon icing.

Allow cake to cool and ice with lemon or vanilla icing if desired.
