Minestrone Soup

500 ml Chicken Stock
1 cup water
1 zucchini diced
Piece of pumkin diced
1 cup frozen green beans
3 carrots diced
1 can Italian diced tomatoes
1 chopped onion or onion flakes
1 sweet potato diced
small piece red capsicum diced
1 cup pasta (cooked al dente - just soft)
black pepper to taste
sprinkle nutmeg
sprinkle cajun spices

Bring chicken stock, water, vegies and spices to the boil and simmer gently until cooked. Add cooked pasta just before serving.

Sprinkle some parmesan cheese on top of each serve if desired (yum).
