Mini Quiche for one - makes 2 quiches approx 2 points each (adapted from the WW forum)
Spray 2 muffin tins with olive oil spray.
Line 2 muffins with wholegrain bread (cut off crusts first)
Mix up 1 egg, a tablespoon skim milk, small quantity grated zucchini, dash of grated parmesan (or low fat grated cheese), dash of dried chives, 1/2 slice chopped lean ham or bacon.
Pour mixture into bread bases and bake in moderate oven for 20 to 25 minutes.
Serve with a leafy salad. Very yummy! (I only had thick bread today. I think it would look better with thin sliced bread, but it tasted delish anyway).
