Egg and Bacon pies















Large muffin size Egg and Bacon Pies (makes 4 pies at 3 & 1/2 points each)

1 sheet reduced-fat puff pastry
3 eggs
2 thin rashers lean bacon
sprinkle of dried chopped chives
2 teaspoons grated parmesan

Cook bacon in 2 sheets of paper towel in the microwave for 1 minute. Chop bacon. Mix up 3 eggs with a fork and add bacon, chives and grated parmesan and pepper and salt to taste.

Cut pastry into quarters and fit in lightly oiled large muffin tins. Trim edges and roll trimmed pieces to make top of pie. Spoon in egg and bacon mixture and top with pastry. Cut slit in top of pie to allow steam to escape. Bake in 210 degree oven for 20 to 25 minutes.

Serve each pie with a leafy salad.

Light Banana Cake














Light Banana Cake (from Slimming Magazine)

They say serves 8, but I say serves about 12 at 2 points per serve.
Very tasty though and moist.

1 & 1/4 cups self raising flour
1 teaspoon ground cinnamon
2 tablespoons low fat spread
1/2 cup caster sugar
1 egg lightly beaten
1/4 cup skim milk
1 cup mashed banana (about 2 medium bananas)

Preheat oven to 180 degrees C and line a 10 x 20 loaf tin (with baking paper)

Sift flour and cinammon together into a large bowl. Rub in spread with fingertips till it resembles breadcrumbs. Lightly stir in sugar, egg, milk and mashed banana.

Spoon into prepared tin and bake 25 minutes till it is golden brown and springs back when lightly touched. Slice and serve.

Cauliflower Bake












Cauliflower Bake Serves 4 as side dish - 1 point per serve
1/2 a small cauliflower
1 tablespoon seasoned stuffing mix
1 tablespoon grated parmesan
1 pkt Continental Four Cheese Sauce Mix

Boil cauliflower till just cooked. Drain and place in small ovenproof dish. Make four cheese sauce mix to directions and pour on top. Sprinkle on seasoned stuffing and parmesan. Bake till hot and golden brown.

Dumplings for top of casseroles















Dumplings (1 &1/2 points each)

1 cup self raising flour
salt to taste
pepper
2 tablespoons chopped parsley and or any chopped herbs
2 tablespoons reduced fat margarine
4 tablespoons cold water

Mix flour, salt, pepper and parsley and rub in margarine. Add water and mix to a soft dough (consistency of scones). Roll into 8 small balls and drop on top of casserole. Cook on high for last 40 minutes.

Beef Hot Pot in slow cooker














Love my Slow Cooker - Beef Hot Pot
I bought a slow cooker a couple of weeks ago and it is wonderful for winter meals. Today I am making a Beef Hot Pot (4 points per serve - serves 4)

500 grams beef (cubed) - heart smart
2 diced parsnips
2 diced carrots
piece of pumpkin diced
small piece of capsicum - diced
1 sachet (50g) Fountain tomato paste
dash of tomato sauce
dash of Worcestershire sauce
1 small onion - diced (or dash of onion flakes)
2 pkts continental roast meat gravy mix


Preheat slow cooker. Make up gravy mix with boiling water. Place vegies and beef in slow cooker and pour over gravy mix. Cook on low for 7 to 9 hours or high for 5 hours. (or in moderate oven in casserole for 3 or so hours )

Serve with rice or potato (points not included above) or make these delicious dumplings and pop on top of the beef mixture 40 minutes before ready to serve. (Don’t know how these work in an oven)

Cauliflower and Cheese pies


Cauliflower and Cheese pies
I love these Cauliflower and Cheese Pies. I used to have one at the Bakery with a coffee when I went with hubby, but now I make my own lower fat versions. (Makes 4 pies) Just as nice, but I have to eat them at home.

Boil approx 1/2 a cauliflower in pieces till cooked (do not over-cook). Spray muffin tins with olive oil spray. Thaw out a sheet of low fat puff pastry. Each sheet makes 4 pies. May have to be rolled a bit thinner. Cut circles slightly larger than muffin tins and place in tins. Mix up a packet of Continental Four Cheeses Sauce Mix (where would I be without my Continental sauces?) as per directions on packet. If you like curry, add a little curry to the cheese sauce. (I also add black pepper) Pour cheese sauce over drained cauliflower. Place cauliflower mix in each of the pie bases. Fill them till they have a rounded top. Top with 1/2 tablespoon grated parmesan. Bake in 200 degree oven till pastry is cooked. Serve with a leafy salad.

Each pie is approximately 4 points (makes 4 muffin size pies)

Mayonaisse (1/2 point per tablespoon)

Mayonaisse (1 tablespoon 1/2 point)

1 can reduced fat condensed milk
1/2 cup vinegar
salt to taste
2 teaspoons mustard (I used seeded mustard)

Mix all ingredients. I use a Tupperware quickshake. Makes life easier.

Tuna Patties

Tuna patties
Tuna Patties (2 points each)

1 can Tuna in springwater
dash of tomato sauce
dash of worcestershire sauce
onion flakes
2 tablespoons fat free mayonaisse (I make my own)
2 potatoes (cooked and mashed)
1 egg white
sprinkle of (chilli, cumin and garlic) flakes
1 tblspoon bread crumbs in mixture and more to coat patties.

Mix all ingredients well and form into 8 small patties. Coat in breadcrumbs. Fry in 1 tblspoon olive oil or olive oil spray until golden brown and cooked (about 20 minutes). Serve with a leafy salad.

Chicken casserole in the Slow Cooker

Made a nice Chicken Casserole in the Slow Cooker: 4 points per serve - serves 4

2 Chicken Breasts cut in pieces
1 pkt Cream of Chicken soup mix
1 tin Creamed corn
small piece capsicum (chopped)
small onion (chopped)or onion flakes
Zucchini diced
2 carrots diced
8 button mushrooms chopped (optional)
piece pumpkin diced (or any other vegie)
3 tblspoons barbecue sauce (or more if desired)
pepper to taste

Toss all vegies, creamed corn and chicken in Slow Cooker. Mix soup mix and barbecue sauce with a cup of water. Pour over chicken and vegies and stir. Cook in Slow Cooker 5 hours on high or 7-8 hours on low. Serve on rice (points not included).

Herb Bread

Herb Bread
Bought a Baker's Delight French stick today to make garlic and herb bread for guests. I have a sadly neglected herb garden (I'm not a gardener and don't like it). I grow my herbs in pots outside though and it is great to pick fresh herbs. I picked tyme, oregano,rosemary and parsley and finely chopped it and mixed in some garlic. As I was adding it to the butter I decided to make my own special little parcel of low fat delight. I cut off 4 slices of French Stick (2 points) and slightly melted 1 portion of Laughing Cow light cheese (1/2 point) and mixed in my herbs and garlic. Wrapped up my little parcel separately and yum I'm going to have 4 slices of herb bread for 2 1/2 points.

Lamb Curry in the Slow Cooker

I am making a nice Lamb Curry in the slow cooker. (approx 4 1/2 points per serve - serves 4)

500g lean diced lamb (heart smart)
dash of curry powder (or curry paste)
1 sachet tomato paste
dash of worstershire sauce
1 pkt roast meat gravy mix (mixed with a cup of boiling water)
1 tablespoon sultanas
1 large sweet potato diced in large pieces
2 carrots sliced
2 sticks celery chopped
1 small onion chopped
sprinkle of mixed spice
pepper to taste

Mix all ingredients in slow cooker and cook on high for 5 hours or low for 7 to 8 hours. (cook in moderate oven in casserole for about 2 1/2 to 3 hours)


Serve with plain CousCous (made to directions on packet) approx 2 1/2 points per 50g (small serve) or pasta or rice. (points not included)

Mini Spring Rolls














Mini Spring Rolls

Makes 10 rolls (1 & 1/2 points for two spring rolls)
Pampas frozen spring roll sheets
1/4 cabbage chopped
1 carrot grated
tiny 125g can corn kernels
dried chopped chives
small amount chopped basil and mint
small piece red capsicum chopped
Bean shoots (optional)
Salt and pepper to taste

Cook all ingredients in pan with a little water, dash of sweet chilli sauce, dash of soy sauce and dash of oyster sauce till cabbage is slightly soft.

Spoon about a tablespoon of mixture on spring roll sheet and roll up as directed. Place on baking paper and lightly spray with olive oil spray. Bake in 190 degree oven 15-20 minutes till golden brown and crisp.

Serve with dipping sauce of soy sauce or sweet chilli sauce.

Curried Corn and Zucchini Soup
















Curried Corn and Zucchini Soup (Makes 4 serves at 1 point each)

2 zuchinni sliced
1 large can creamed corn
onion flakes
3 crushed chicken stock cubes
sprinkle garlic flakes
curry powder to taste
sprinkle black pepper
1 litre water


Bring all ingredients to the boil and simmer till cooked. Blend when cool.

Serve hot. If I am feeling naughty or have points to spare, I sprinkle grated parmesan on top of soup. Yum!!! (points not included).

Small Meringues














Makes 18 at 1 point each (lots of sugar though)
4 egg whites
1 1/2 cups sugar
I add a few drops of vinegar

Beat egg whites, then add sugar and vinegar beating all the time till stiff and peaks form.

Spoon onto baking paper on tray. Sprinkle with hundreds and thousands. Bake at 120 degrees C for 35 to 40 minutes. Turn off oven and allow to cool in oven. Makes approx 18 meringues.

Chow Mein















250g heart smart lean beef mince
1 pkt chicken noodle soup mix
dash of worchestershire sauce
dash of tomato sauce
curry powder to taste
1 grated zucchini
1 grated carrot
1/4 chopped cabbage
onion flakes or small chopped onion
1 tablespoon sultanas (optional)
1 cup water

Brown mince and onion in a little water. Add all ingredients and simmer with lid on pan till water is reduced and mince is cooked. Serve on a bed of rice. (Rice points not included).

Serves 4. (3 points per serve).

Sausage Rolls














Sausage rolls (makes 16 small rolls - 1 & 1/2 points each)

4 thick tasty sausages (I use old english beef)
1 sheet reduced fat puff pastry


Boil sausages for 15 minutes. Thaw pastry sheet while sausages are cooking. Make sure all skin is removed and cool sausages in water. Cut pastry sheet in half lengthways. Cut round ends off sausages. Place 2 sausages on half a sheet and roll. Seal edge with a little milk. Cut each rolled up sausage into 4 sausage rolls. Brush with a little milk. Bake in 220 degree oven for approx 15 minutes or until golden brown.

3 x 200g tubs Yoplait no fat Berry brulee yoghurt
1/2 cup frozen mixed berries

Blend all ingredients.
Freeze in icy pole moulds.

Makes 5. (large) (1 point each)

Easy pumpkin soup

PUMPKIN SOUP
1/2 a Pumpkin chopped
1 Zucchini chopped
1 Carrot sliced
1 apple chopped
onion flakes
2 chicken stock cubes - crushed
1 litre or so of water ? or less for thicker soup.
sprinkle of nutmeg
sprinkle of garlic flakes
pepper to taste


Cook all ingredients in saucepan until vegies are soft. Allow to cool and blend.

Serve hot.

Easy baked fish

Easy Baked Fish (2.5 points per serve)

1 white fish fillet per person (I used Deep Sea Trevalla)
1 tablespoon seasoned stuffing mix dry
olive oil spray
Squeeze of lemon juice
pepper to taste

Spray fish fillet with olive oil spray. Sprinkle seasoning mix over fish and squeeze lemon juice on top. Sprinkle with black pepper. Wrap fish in baking paper to make a parcel.
Bake in moderate oven for approx 20 minutes. Open parcel carefully at the top to brown top during last 5 minutes if desired.


Delish served with a leafy salad and sweet potato mashed. (points not included).

Beef Lasagne


Beef Lasagne

It is approx 5 points per serve - makes 4 servings

250 grams Lean Heart Smart Beef mince
1 carrot grated
1 small zucchini grated
1 Jar Raguletto Classic Tomato Pasta Sauce
2 sachets tomato paste
1 can diced or crushed tomatoes
1 pkt Continental 4 cheeses sauce mix (mixed with water as per instructions on pkt)
dash of onion flakes (or a small onion chopped)
6 or 7 instant curly lasagne sheets
2 tablespoons grated parmesan cheese

Brown mince and onion in a little water in pan. Add carrot, zucchini, tomatoes, tomato paste and pasta sauce and simmer till cooked. Place a layer of lasagne sheets in lasagne dish. Next pour on a layer of mixture, then pour on half the cheese sauce mix
Place on another layer of lasagne sheets, pour on more mixture , another layer of lasagne sheets, the remaining tomato mixture and remaining cheese sauce mix.
Sprinkle on parmesan cheese.
Cover with foil and bake for approx. 40 to 45mins in a 180 degrees (moderate oven).
I have cut down on meat and added the vegies. No one will even notice the vegies once it is cooked. Delicious served alone or with a leafy salad.

Muesli Slice



Muesli Slice Recipe
I made a nice Muesli Slice. Not a very sweet one, but I don't like things too sweet. This is nice to have on hand if I feel like a snack with a cuppa. Doesn't look very elegant but tastes nice.


3 cups Muesli (I used Lowan Fruit and Nut Natural Muesli)
1/3 cup honey
1 cup orange juice (no added sugar)
1 egg white (optional – binds together better, but I leave it out)

Place honey and orange juice in a small saucepan and bring to the boil. Reduce and simmer for 8 to 10 minutes or until mixture is syrupy.
Stir syrup into Muesli and mix well.
Press mixture into slice tray lined with baking paper
Bake in moderate oven for 20 minutes or until golden brown. Mark out 15 squares lightly.

Allow to cool and cut into 15 small squares (approx 1.5 points per square)

Light Mars Bars Slice














Light Mars Bar Slice (from Annette Sym's Symply too Good to be True No 3 book)

Makes 15 slices (1.3 points per serve)

Base
2 X 44.5 Mars Bars Lite
3 cups Rice Bubbles
2 tablespoons golden syrup
1 tablespoon reduced fat margarine (Flora Lite)
1 tablespoon skim milk
cooking spray

Icing
3/4 cup icing sugar
2 tablespoon cocoa
1-2 tablespoons skim milk

BASE: Place rice bubbles in a large mixing bowl. In a microwave safe bowl place roughly chopped Mars Bars, margarine and golden syrup. Melt on high for 2 minutes, stir well, return to microwave for a further 30 seconds. Add milk and stir mixture until smooth. Pour melted chocolate mixture into rice bubbles, stirring until covered with chocolate mix. Coat a slab tin with cooking spray and press mixture into tin evenly. Refrigerate.

ICING: once slice is set place all icing ingredients into a small mixing bowl and mix together well. Spread icing over base and refrigerate. Once set cut into 15 slices.
This slice is best kept refrigerated.


I use baking paper to line the tray instead of spraying it. I also cut the slices in half again and count them as 1/2 a point.
